Okay, so I'm sort of obsessed with this noodle dish. It has all of my favorite Asian flavors: sesame, rice wine vinegar, soy, garlic, ginger, green onion, and cilantro, all combined into one delicious + easy noodle dish.
For any Nor Cal locals, this recipe tastes exactly like the Asian Noodle Salad from La Bou, which I was very excited to learn. I hope you give it a try!
Sesame Soba Noodles
- 8 oz. dry soba noodles
- 1/3 cup rice wine vinegar
- 2 Tbsp. soy sauce
- 1 Tbsp. sesame oil
- 1 Tbsp. sugar
- 1 clove garlic, pressed
- 1 tsp. freshly grated ginger
- 2 green onions, thinly sliced
- 2 Tbsp. chopped fresh cilantro leaves
- 1 tsp. or more of toasted sesame seeds
- optional add-ons: hard boiled egg, teriyaki chicken, lots of veggies, etc.
In a large pot of boiling water, cook your noodles according to the package instructions. Rinse under cold water and drain; set aside.
In a small bowl, whisk together the rice wine vinegar, soy sauce, sesame oil, sugar, garlic, and ginger.
In a large bowl, combine the noodles, rice wine vinegar mixture, sliced green onion, cilantro, and sesame seeds. Serve immediately, and enjoy!
*Note: If not serving immediately, be sure to toss the noodle mixture with a tablespoon or so of vegetable oil so that the noodles don't stick together.
**Note: These noodles are a great side dish, but can be an awesome main dish with additions like sesame/teriyaki chicken, hard boiled eggs, sliced red bell pepper, broccoli, bean sprouts, peanuts, cashews, etc.
Considering how easy and delicious this dish was, I know I'll be making it often, and I'm totally planning on trying out new variations, too. This one, this one and this one are next on my list!
