I have a great muffin recipe for you today!
I loved these muffins, and what's really great about them is they are flourless, oil & butter free, and mostly sugar-free (they do have natural sugars from the bananas & honey!), so they're pretty darn healthy, too.
The main ingredients are oats, ripe bananas, eggs, greek yogurt, and honey, and these all combine to create quite a tasty muffin that is perfect for breakfast! I hope you give em a try!
Banana Oatmeal Breakfast Muffins
- 2.5 cups old fashioned oats
- 1 cup plain greek yogurt (low fat or non fat works great!)
- 2 eggs
- 1/3 cup honey
- 2 tsp. baking powder
- 1 tsp. baking soda
- 2 Tbsp. chia seeds (or ground flax seed)
- 1 tsp. vanilla
- 2 ripe bananas
- Optional toppings like walnuts, blueberries, chocolate chips, dried fruit, etc.
Preheat the oven to 400 degrees. Spray a muffin tin with non-stick cooking spray or line with silicone or foil liners.
Place the oats in a food processor and pulse for about 10 seconds. Add the remaining ingredients to the food processor (except for the toppings), and blend until everything is mixed together & the oats are smooth... I could have blended mine a bit longer for smoother oats, but they were still great!
Stir in your desired toppings, and evenly distribute the batter among the muffin wells. Bake for 18-20 minutes, or until a toothpick comes out clean. Let cool for a few minutes, and enjoy!
I loved these because they tasted good, had some substance, and weren't overly sweet. Perfect for a breakfast muffin, and they're a great way to use up those overly ripe bananas!
