When it comes to snacks and appetizers, dips are a favorite of mine, but sometimes it's hard to find options that are both delicious and healthy. Hummus is one of my favorites for that reason, but I was really intrigued when I came across this recipe that combined edamame, avocado, and cilantro. I love all of those flavors, so it sounded like a win to me.
The result was quite tasty, and I'm excited to have another healthy dip option to choose from. I love that this one is light, fresh, and flavorful, and is good served with veggies or pita chips.
Edamame Avocado Dip
- 12-16 oz. shelled edamame
- 1/2 or 1 whole avocado, peeled, pitted, and cut into chunks
- 1/2 cup plain greek yogurt (fat free works)
- 1/4 cup lime juice
- 1/2 cup chopped cilantro
- 1 clove garlic, minced
- 1 green onion, roughly chopped
- 1-2 tsp. salt
- 1/2 cup water
- 1 tsp. (or more) siracha sauce (optional)
- 3 drops sesame oil (optional)
First, add the shelled edamame to a bowl and fill with water until the edamame are covered. Microwave for 1 minute, or until edamame have softened a bit. Drain the edamame and blend them in a food processor. Add the avocado, greek yogurt, lime juice, cilantro, garlic, green onions, and salt and blend well.
If it's a little thick, add water until it reaches the right consistency, then add the siracha and sesame oil, if using. Taste, checking for seasonings, and adjust accordingly. Enjoy!
