Before signing off for the weekend, I wanted to share this amazing margarita recipe. I've mentioned how much I love a good margarita before, and this one definitely says summertime to me! The cucumber adds an extra refreshing note to the marg flavor, and the cilantro adds the perfect herbaceousness (that's a word, right??). If you're looking for a refreshing weekend cocktail to cool off this weekend, I highly recommend giving this one a try!!
Cucumber Cilantro Margarita
- 4 thin slices cucumber
- 2 Tbsp. fresh cilantro leaves, plus a sprig for garnish
- 1-2 tsp. agave syrup or sugar, depending on how sweet you like yours
- 3 lime wedges
- juice of 1 fresh lime
- 2 1/2 oz. silver tequila
- 1 oz. Cointreau, or Triple Sec
- lime wedge and kosher salt to rim glass, optional
If salting your glass, rub edge with a lime wedge, and dip edge into the salt. Skip this step if you don't prefer salt. *Note: I've found that I do like just a hint of salt in my margs, and an easy (and less messy!) way to do this without actually salting the rim, is to just add a very small sprinkle of salt to the drink itself.
Muddle 3 slices of cucumber, fresh cilantro, agave syrup, and 3 lime wedges in the bottom of a cocktail shaker. Fill the shaker with ice, and add the tequila, Cointreau and juice of a lime and shake heavily, for a good 10-20 seconds. Strain over ice into your salt-rimmed glass, and garnish with a slice of cucumber and cilantro sprig.
